With over 40 identifiable Italiano breads, Pane Carasau is just one that is new to me. It is very similar to a lavish style bread. I saw this about a week ago at the local store and it came in various flavours, so yesterday I asked for a mixed bag of La cosa (‘the thing’ madly pointing at the crispy selection) these are so delicious; super crispy, salty and perfect by themselves or with figs, cheese and local wine as we paired it with for dinner.
Originally from Sardinia it is sometimes called ‘carta da musica’ - music paper - which I originally thought was because of the noise they make when broken but turns out it is because the bread is so thin you could read a music score through it! If prepared properly with a double cook, it can last a year and was a common staple for shepherds on the island. It is told that some of this style of bread was found during an archaeological dig of a nuraghe (ancient Sardinian building) that dates it back to at least 1000BC.
